The cultivation of olive oil dates back to antiquity, around 3500 BC, and has steadily evolved as a significant aspect of Greece’s agricultural and cultural heritage. Serifos, with its rugged land and wild landscape, hosts traditionally terraced family olive groves that are part of its rich cultural and agricultural heritage. Similarly, our family has been caring for its own olive trees for decades, passing them down from generation to generation, continuing the tradition. Our generation, emphasizing continuous evolution and innovation, decides to take a step further by establishing a modern cold-pressed olive mill in Serifos. Using modern cold-press technology, we produce high-quality olive oil that preserves its flavors and nutritional properties intact.
The process begins with the collection of olives from the trees, often using motorized devices or even by hand, traditionally. Next, the olives are cleaned and sorted to remove any unwanted materials, selecting only high-quality fruits. The next phase is the milling, during which the olives are crushed or pressed to release the olive oil. It is then separated from the remaining solids through various methods. The final olive oil is collected, stored in suitable containers, and prepared for standardization, maintaining the freshness and flavor of this wonderful product that enhances the taste
